As you all know I am following the, “Wheat Belly Diet” if you follow my blog regularly. I do miss my pasta though, so I searched the web for an alternative and that is when I found, Miracle Noodle. They agreed to send me a couple samples, so I could see if I liked the product and share my experience with you all. I won’t lie. I was a little nervous. I contacted some gluten free friends and they all said they liked and heard about the product. I was told by a friend to cook them in a broth instead of water. However, I completely forgot this advice and cooked them in water. I loved them!
My husband wanted Fettucini Alfredo. I make it homemade. My recipe is here: http://jillyindacity.com/2012/11/emmas-chicken-fettuccine-alfredo-2/
I didn’t want to be left out. I wanted it too, but I know if I eat wheat I feel like complete crap, so I was so happy my Fettuccine Miracle Noodles arrived around the same time I was going to make it. Rather than dump the Alfredo sauce on pasta noodles I put it on my Miracle Noodles and it tasted amazing. I didn’t feel deprived at all. My husband had regular pasta, but took a taste of mine and said it wasn’t bad.

I was also sent the Ziti and Angel Hair. Ziti I just topped them with some spaghetti sauce and it was delicious. I did miss my garlic bread though, but I have to concentrate being a slimmer me and getting healthy is more important.
The angel hair I just cooked in a broth like a friend had suggested and I added some veggies. It was a healthier version of cup of noodle.
Well now that you know Miracle Noodle tastes good I am sure you want to know what makes it a Miracle.
The three ingredients of shirataki noodles are Glucomannan, which is soluble fiber extracted from the root of a Japanese plant called a Konnyaku Imo, water and a calcium additive. This calcium additive is added to the noodles tokeep their shape intact. This is a food grade calcium additive known as pickling lime or calcium hydroxide. You should know that the noodles contain no soy, tofu, gluten/casein, legume or gluten.
